Today was another lazy Sunday in our house. [Although, I did run 6 miles before breakfast, so not that lazy.] Recently, I have been inspired by Ella Woodward, her food always looks so tasty and colourful, she’s changed the reputation of wheat free food.
I love cooking and this afternoon I made us a super salad, with pretty much all of my favourite ingredients. It takes about 30 mins to prepare . . . bon appetite!
Ingredients.
Green Salad [Whatever you like, rocket, lettuce, spinach etc]
Tomatos
Cucumber
Avocado
Spring Onion
Pine Nuts
Brocoli
Chicken breast – Pan fried in coconut oil, coriander, garlic & honey.
Sweet Potato – Roasted in olive oil, sea salt & rosemary.
Easy Peasy.
Start off by peeling the sweet potatoes, place them in an oven dish and season with oil, salt & fresh rosemary. Roast them for 30 minutes at 200*
While you are waiting for the potatoes to cook, you can prepare the salad & steam the broccoli.
Next, heat a little coconut oil in a pan, add the chicken and cook for 10-12 minutes.
Add the fresh coriander and chopped garlic. Make sure the chicken is thoroughly cooked.
Lastly, build the salad however you like, I sometimes add a little mayonnaise or caesar salad dressing too.
